                    Spinach Salad with Bacon and Apple

   1      lb            Fresh spinach
   5      sl            Bacon
     1/3  c             Almond -- slivered
     1/4  c             Almond oil
   3      tb            Tarragon vinegar
   1      ds            Sugar
                        Salt and pepper
   1      ts            Dry mustard
   3                    Scallions and tops --
                        - thinly sliced
   1                    Red apples -- unpeeled, diced

Wash spinach thoroughly. Remove stems, and discard discolored leaves.
Dry and crisp in refrigerator.

Fry bacon until crisp. Remove slices to drain, pour off grease and
place almonds in pan. Stir over medium heat until toasted. Drain on
paper towels.

To prepare dressing combine almond oil, vinegar, sugar, salt, pepper,
and mustard. Whisk until blended and set aside.

Tear spinach into large pieces, and place in a large salad bowl with
scallions, apples, and almonds. Crumble bacon and add. Just before
serving rewhisk dressing, pour over salad, and toss.
