* Exported from MasterCook Mac * Spicy Shrimp Salad Recipe By : Delicious Decisions/tpogue@idsonline.com Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Vinaigrette: 1/3 c Olive oil 5 tb Lime juice -- fresh Salt and pepper 1 ds Cayenne 2 tb Cilantro -- chopped Salad: 1 c Jicama -- julienned 2 tb Peanut oil 2 Red chiles 2 Shallot -- chopped 2 lb Shrimp -- peeled and deveined 1/4 c Scallion -- thinly sliced Prepare vinaigrette by mixing ingredients thoroughly. Pour about a fourth of the vinaigrette over jicama and set aside. Heat peanut oil in a large skillet, break chilies in half and add to oil. Add shallots first, then shrimp, being careful not to cool the oil. Cook for about 1 minute, stirring and turning shrimp. Do not overcook. Remove from pan and discard chilies. Toss shrimp and shallots immediately in the vinaigrette. Add jicama and scallions and serve at once. To serve chilled, prepare vinaigrette and refrigerate. Cook shrimp and shallots as indicated but allow to cool. Add to vinaigrette and chill.
