* Exported from MasterCook * Soybean-Raisin Salad Recipe By : Magazine Serving Size : 6 Preparation Time :0:00 Categories : Salads And Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 c Dried soybeans, lima beans, or green peas Salt 1 Carrot -- shredded 1/3 c Sweet pickle relish 1 Celery rib -- finely chopped 1 Apple -- peeled, finely chopped 3 tb Mayonnaise or salad dressing 1/4 c Raisins Lettuce Sort and wash soybeans. Place in a heavy saucepan or Dutch oven, and cover with water. Bring to a boil; cover and cook 2 minutes. Let soak overnight. Return beans to a boil; boil gently, not completely covered with lid, until tender, 1 to 1 1/2 hours. Add salt to taste. Drain beans and chill.
