MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Easy Pesto Risotto With Sun-Dried Tomatoes Categories: Five, Rice, Cheese, Vegetbles Yield: 8 servings 1 tb Olive oil 1 1/2 c Uncooked arborio rice 32 oz Chicken broth 3/4 c Parmesan cheese; shredded 8 oz Jar julienned oil-packed - sun-dried tomatoes; - drained 2/3 c Prepared pesto 1/4 ts Salt 1/4 ts Pepper Select saute setting on a 6 qt electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, add rice; cook and stir until rice is coated, 1-2 minutes. Press cancel. Add broth. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 7 minutes. Quick-release pressure. Stir in Parmesan, sun-dried tomatoes, pesto, salt, and pepper; heat through. If desired, serve with additional Parmesan.
