              Tuna And Rice Salad With Sweet Curry Dressing

   2      Cans          tuna in oil -- drained
   1      Cup           brown rice
   3                    green shallots -- chopped
   1                    apple -- chopped
     1/3  Cup           raisins -- chopped
   1      Stalk         celery -- chopped
   1                    red pepper -- chopped
                        SWEET CURRY DRESSING:
     2/3  Cup           oil
     1/3  Cup           white vinegar
   1      Tbsp          curry powder
     1/4  Cup           sugar

Add rice to large pan of boiling water, cook for about 30 min, or until
tender. Drain rice, rinse under cold water, drain well. Combine rice,
tuna, apple, raisins, shallots, celery and pepper with dressing  in bowl;
mix well. DRESSING Place all ingredients in a jar, shake well.
