MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Amish Potato Salad Categories: Potatoes, Vegetables, Salads Yield: 10 Servings 3 lb Medium Yukon Gold potatoes; - peeled, diced 1 1/2 c Mayonnaise 1/2 c Sugar 3 tb Prepared mustard 2 tb Cider vinegar 1 ts Salt 1/2 ts Pepper 6 lg Eggs; hard boiled, chopped 1 sm Onion; chopped 1 Celery rib; chopped Paprika (optional) Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10 to 15 minutes or until tender. Drain; transfer to a large bowl. In a small bowl, mix mayonnaise, sugar, mustard, vinegar, salt, and pepper. Drizzle over potatoes; toss to coat. Gently stir in eggs, onion, and celery. Cover and refrigerate until chilled, 2 to 3 hours. If desired, sprinkle with paprika and celery leaves.
