* Exported from MasterCook * German Summer Potato Salad Recipe By : Mr. George Baier Serving Size : 15 Preparation Time :0:02 Categories : Potato Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 c Strong chicken stock -- hot 1/2 c Cider vinegar 1/2 c Green onion -- minced 2 ts Black pepper 2 ts Salt 1 c Oil 10 lb Potatoes -- cooked and sliced 1 c Fresh parsley -- chopped This salad was brought to the US by George Baier from his home in the Black Forest area of Germany. George would prepare massive amounts of this salad for events at his German Shooting Club in Auburn Hills, Michigan, such as the Octoberfest, Schutzenfest, etc. Toss all ingredients together. Serve at room temperature. Note: The chicken stock can be homemade or canned, but fortified with a Minor's type chicken base or boullion to give it intense chicken flavor.
