Cousins Serving Size : 1 Preparation Time :0:00 Categories : Pickles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 qt Watermelon rind -- diced 1 tb Lime juice 2 c Sugar 1 c Vinegar 10 dr Oil of cinnamon 10 dr Oil of cloves 1 qt Water 1 qt Vinegar Add rind and lime juice to 1 qt water and soak overnight. Rinse rind, drain, and cook in water for about 1 hour or until tender then mix sugar, vinegar, oil, and add these to the rind. Simmer mixture for 10 minutes and set aside, for 1 night. Drain. Fill pickle jars with mixture. Boil 1 qt vinegar until clear and thick add this to rind already in jars. Seal. - - - - - - - - - - - - - - - - - -
