MMMMM---- Recipe via Meal-Master (tm) v8.06 Title: Quick Pickles Categories: Five, Squash, Preserving Yield: 2 Cups 4 sm Firm cucumbers; peeled or - scrubbed, in 1/8" slices 1 tb Sugar 1 1/2 ts Fine sea salt 1 tb Rice vinegar Slice cucumbers 1/8" thick using a mandoline or a sharp knife. Toss with the sugar and salt and leave in a colander to drain for 20 to 30 minutes. Rinse well and drain. In a bowl, toss cucumbers with the vinegar, tasting and adding more as desired.
