MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lemon Herb Quinoa Categories: Grains, Citrus, Herbs Yield: 4 servings 2 c Water 1 c Quinoa; rinsed 1/2 ts Salt; divided 1 tb Fresh basil; minced 1 tb Fresh cilantro; minced 1 1/2 ts Fresh mint; minced 1 ts Lemon zest; grated In a small saucepan, bring water to a boil. Add quinoa and 1/4 ts salt. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat. Add the basil, cilantro, mint, lemon zest, and remaining salt; fluff with a fork.
