MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Cigares D'isra"El Categories: Dessert, Israel, Jewish Yield: 70 Servings 3 c Sugar 1 1/2 c Water 2 tb Lemon juice Honey; to taste Lemon juice; to taste 2 c Ground almonds 2 tb Sugar 1 ts Cinnamon 1 ts Orange peel; grated fine 1 lb Wonton skins Vegetable oil; for frying 1/2 c Pistachios; chopped Mix sugar, water, and lemon juice in a nonreactive saucepan. Bring to the boil and cook until a candy thermometer reads 216 F (102 C). Take off heat, let cool slightly, and stir in honey and lemon juice to taste. Set aside. Mix thoroughly: almonds, sugar, cinnamon, and peel. Take a wonton skin and spread 1 T almond filling across the bottom, leaving room at the sides so you can tuck in the edges. Tuck in the edges and roll up jelly-roll fashion. Moisten the end with a little water to seal. The result is a thin cylinder. Heat at least 1" of oil to 350 F (176 C). Fry rolls a few at a time until golden on all sides, about 3 minutes. Drain on paper towels. Remove to a large rimmed tray or baking sheet. Drizzle with the syrup and let stand 1 hour.
