MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Kimchi Fried Rice Categories: Vegetables, Rice, Herbs Yield: 4 Servings 2 tb Oil; divided 1 sm Onion; chopped 1 c Kimchi; coarse chopped 1/2 c Carrots; matchstick cut 1/4 c Kimchi juice 1 cl Garlic; minced 1 ts Fresh ginger; minced 3 c Leftover short grain rice 2 Green onions; thin sliced 3 ts Soy sauce 1 ts Sesame oil 4 lg Eggs MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Nori; sliced Black sesame seeds Green onions In large skillet, heat 1 tb oil over medium-high heat. Add onion; cook and stir until tender, 2 to 4 minutes. Add kimchi, carrots, kimchi juice, garlic, and ginger; cook 2 minutes longer. Add rice, green onions, soy sauce, and sesame oil; heat through, stirring frequently. In another large skillet, heat remaining 1 tb oil over medium-high heat. Break eggs, 1 at a time, into pan; reduce heat to low. Cook to desired doneness, turning after whites are set if desired. Serve over rice.
