MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Ada (Spicy Dal Pancakes) Categories: Indian, Pancakes Yield: 18 Pancakes 1 c Rice 1 c Mixed lentils; any kind 1/4 c Urad dal or black gram 1 ts Fenugreek seeds 1/4 ts Asafoetida 1 c Spinach; chopped 1/4 c Cilantro; chopped 1 lg Onion; minced 1 ts Black pepper powder 1/4 c Oil 4 c Water Salt; to taste Soak rice in 2 cups of water. Soak mixed lentils, black gram, and fenugreek seeds in another 2 cups of water. Both should soak for at least 6 hours, or overnight. In the morning, wash, drain, and grind the rice and dals separately in a blender, then mix together. Batter should drop ibn lumps onto the skillet, as for uttapams. To this batter, add the asafoetida, pepper, chopped greens, and salt, and mix well. Heat a heavy-bottomed skillet and coat the bottom with a little oil. Fill a large ladloe with the batter and spread it on the skillet to form a pancake 1/4" thick and 6" in diameter. Sprinkle a few drops of oil on top. Let it cook for about 2 minutes on the side. When it is firm, deftly turn it over and cook the other side. The color should be golden brown when done. Serve hot with Coconut Chutney. Recipe by The Taste Divine by Vanamali, 1993 MMMMM
