Bring to a boil, then reduce heat and simmer until completely tender, about 30 minutes. Heat a skillet over medium heat and add oil, then add all of the spices and cook over medium heat until the mustard seeds begin to pop. Slowly spoon the cooked lentils (water and all) into the skillet with the spices (be careful, it will spatter), and stir to mix.
