     Title: Beef Tortilla Casserole

           Basic Red Sauce;
           - separate recipe
           Southwest Guacamole;
           - separate recipe
    1/2 c  Vegetable oil
      1 lb Ground beef
    1/2 c  Onion (1 md); chopped
      2 c  Cheddar cheese; shredded
     10    Corn tortillas (6 to 7")
      2    Anaheim chiles; seeded,
           - finely chopped
     15 oz Can pinto beans; drained

           Dairy sour cream
 
  Prepare Basic Red Sauce and Southwest Guacamole; set aside. Heat
  oil in 10" skillet until hot. Cook tortilla strips in oil until
  light golden brown, about 1 minute; drain. Cook and stir grond
  beef, chiles, and onion until beef is brown; drain. Heat oven to
  350 F. Arrange tortilla strips in bottom of greased rectangular
  baking dish 13x9x2". Top with beef mixture, Basic Red Sauce, beans,
  and cheese. Bake until hot and bubbly, 25 to 30 minutes. Serve with
  Southwest Guacamole and Sour Cream.
