MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cass Abrahams' Bobotie Categories: Beef, Breads, Herbs, Dairy, Fruits Yield: 6 Servings 2 sl Stale white bread; thick 300 ml Water 15 ml Oil (1 tb) 50 ml Butter (4 tb) 2 lg Onions; chopped 800 g Beef mince (1 3/4 lb) 3 cl Garlic; crushed 15 ml Masala (1 tb) 5 ml Turmeric (1 ts) 10 ml Ground cumin (2 ts) 10 ml Ground coriander (2 ts) 3 Cloves 2 ml Peppercorns (1/2 ts) 5 Allspice berries 125 ml Sultanas (1/2 c) 60 ml Flaked almonds (1/4 c) 5 ml Dried mixed herbs (1 ts) 25 ml Chutney (2 tb) Salt & fresh ground pepper 6 Lemon leaves; up to 8 250 ml Milk (1 c) 2 lg Eggs; beaten Soak bread in water. Fry onions in oil and butter until just transparent. Place all other ingredients except bread, lemon leaves, milk, and egg in a large bowl and mix. Add fried onions in oil to mixture. Squeeze water from bread, add bread to meat and mix well. Spread in a greased ovenproof dish. Roll lemon leaves into spikes and insert into the mixture. Bake at 180 C/350 F for 30 minutes. Lightly beat eggs and milk together and pour over meat. Bake until egg mixture has set. Serve with yellow rice and blatjang.
