                            Cantaloupe Sherbet

   1      md            Ripe cantaloupe
   2      tb            Fresh lemon juice
     1/2  c             Sugar
     1/4  c             Honey
   3      c             Half and half
     1/2  ts            Vanilla extract

Cut cantaloupe from rind; remove and discard seeds. Cut into 1"
cubes. Puree cantaloupe cubes and lemon juice until almost smooth. In
a large bowl, combine sugar, honey, and half and half. Add pureed
cantaloupe mix and vanilla. Stir until sugar dissolves. Pour into ice
cream canister and freeze according to manufacturer's directions.

Yield: 2 Quarts
