* Exported from MasterCook * Summer Peaches and Cream Parfait Recipe By : Southern Living Magazine Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 ts Ascorbic-citric mixture 2 c Fresh peaches -- sliced 1/4 c Butter -- softened 3/4 c Powdered sugar -- sifted 1 Egg -- slightly beaten 1/2 pt Whipping cream -- whipped 1/2 c Vanilla wafer crumbs 1/4 c Crystallized ginger -- - finely chopped Prepare ascorbic-citric mixture according to package directions; sprinkle over peaches, mixing well. Set aside. Cream butter and sugar; add egg, beating well. Cook egg mixture in top of a double boiler, stirring constantly, until thickened and mixture coats a metal spoon. Cool.
