* Exported from MasterCook Mac * Red, White, and Blueberry Parfait Recipe By : Recipe Page (Jun 30, 1996) Serving Size : 6 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c Lowfat (2%) cottage cheese 1/2 c Light sour cream 3/4 ts Mace * 1 tb Granulated sugar 2 c Fresh blueberries 1 tb Powdered sugar 1 c Fresh raspberries 1/2 tb Powdered sugar * Can substitute nutmeg, cinnamon, or allspice. Combine cottage cheese, mace, granulated sugar, and sour cream in blender. Blend until smooth; refrigerate. Gently toss blueberries with 1 tb powdered sugar. Refrigerate in a small bowl. Gently toss raspberries with remaining 1/2 tb powdered sugar. Refrigerate in a small bowl. At serving time, place a small scoop of the cottage cheese mixture in bottom of each of 6 parfait glasses. Add a generous layer of blueberries. Add another scoop of cheese mixture. Top each glass with raspberries. Yield: 6 Servings Notes: * You can make all this ahead and assemble just before serving. * This was hardly sweet at all, just tasty.
