* Exported from MasterCook Mac * Chilled Lemon Souffle Recipe By : Delicious Decisions/tpogue@idsonline.com Serving Size : 8 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 Eggs -- separated 1 1/4 c Sugar 1 tb Lemon rind -- grated 2/3 c Lemon juice 2 Env gelatin -- unflavored 1/2 c Water 2 c Whipping cream 1 ds Cream of tartar -- or more 2 c Fresh berries -- as garnish Beat together egg yolks and sugar. Add lemon rind to yolks and gradually add juice, beating constantly. Soften gelatin in water and heat until it dissolves. Allow to cool slightly. Whip cream lightly and stir into the lemon mixture. Add gelatin and continue stirring until mixture begins to thicken. In a separate bowl, beat egg whites with cream of tartar until stiff but not dry. Fold into lemon mixture. Spoon into a souffle dish (2 qt capacity). Chill several hours or until completely set. To serve, spoon souffle onto chilled serving dishes and top with berries. Notes: Egg whites, when whipped can be increased in volume 8 times. Cream of tartar added to whites adds no volume, but the acid helps prevent lumpiness and collapse from over coagulation or overbeating. - - - - - - - - - - - - - - - - - -
