MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Simple Lemon Mousse Categories: Citrus, Dairy, Desserts Yield: 6 servings 2/3 c Sugar 2 tb Corn starch 1 ds Salt 3 lg Egg yolks 2/3 c Whole milk 1/2 c Lemon juice 2 ts Lemon zest; grated 1 c Heavy whipping cream Lemon slices (optional) In a small saucepan, mix sugar, corn starch, and salt; whisk in egg yolks and milk until smooth. Whisk in lemon juice until blended; bring to a boil over medium heat, stirring constantly. Cook and stir until thickened slightly, about 2 minutes longer. Stir in lemon zest. Transfer mixture to a bowl. Cover and refrigerate until cold. To serve, in a small bowl, beat cream on high speed until soft peaks form. Fold into lemon mixture. Spoon into serving dishes.
