Bring cream and half and half to a boil in a large heavy saucepan. Reduce heat to low add the chocolate and whisk until smooth. Remove from heat. Whisk yolks and sugar in a large bowl to blend, gradually whisk in chocolate mixture. Divide mixture evenly among 3/4 cup custard cups and place cups in a large baking pan. Add enough hot water to come halfway up the sides of the cups. Bake until custards are set, about 50 minutes. Cover and chill for 2 hours. Sprinkle 1 tb sugar over each custard and broil or use a torch until sugar turns golden then refrigerate for another 2 hours or until custards are set.
