                           IRISH CREAM TRUFFLES

                        Ganache
   8      ounces        dark sweet chocolate
     3/4  cup           heavy cream
     1/4  cup           Irish Cream Liqueur
                        Dipping
  16      ounces        dark sweet chocolate
     1/4  cup           vegetable oil
                        Garnish
   2      cups          chocolate sprinkles

When ganache has cooled to room temperature, add Irish cream before
refrigerating.  Roll dipped truffle in chocolate sprinkles
