MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Coal Miners Chocolate Cake Categories: Cakes, Chocolate, Fruits Yield: 16 Servings MMMMM----------------------------CAKE--------------------------------- 15 1/4 oz Box devil's food cake mix 21 oz Can cherry pie filling 2 lg Eggs; room temperature 2 ts Vanilla extract MMMMM--------------------------FROSTING------------------------------- 8 tb Unsalted butter 1/3 c Evaporated milk 1 c Sugar 1/4 ts Salt 1/4 c Baking cocoa 1 c Semisweet chocolate chips Set oven @ 325 F/165 C. In a large bowl, combine cake mix, cherry pie filling, eggs, and vanilla extract; stir until evenly mixed. Transfer to a greased 13x9" cake pan. Bake the cake 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Meanwhile, prepare frosting. In a small saucepan over medium-low heat, combine butter, sugar, salt, cocoa powder, and evaporated milk. Cook, stirring occasionally, until the butter has melted and the sugar is fully dissolved, about 3 to 4 minutes. Remove pan from the heat; add the chocolate chips. Stir until the chocolate has melted and the frosting is smooth and creamy. Pour frosting over the warm cake. Use an offset spatula to spread into an even layer.
