(hard ball stage). Don't stir after you've dissolved the sugar. Pour the hot liquid into a pie pan that has a string suspended across the top. You'll have to weigh the the ends so that it doesn't touch the bottom of the pan. Or you can punch holes in the edge of the pan and tie the string. You can also lay a skewer across and out of the pan. The string should be 3/4" under the surface of the sugar water. Cover the pan with tin foil and DON'T TOUCH IT FOR A WHOLE WEEK!!
