(Marshmallow Fluff) Serving Size : 30 Preparation Time :0:30 Categories : Candy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 c Sugar 12 oz Can evaporated milk 1/4 lb Butter 12 oz Marshmallow fluff or creme 1 ts Salt 24 oz Semisweet chocolate pieces (2 pkg) 1 ts Vanilla 1 c Walnuts or pecans -- chopped (optional) Marshmallow Fluff is made by Durkee-Mower. The recipe on it is called Never Fail Fudge, essentially the same as Fantasy Fudge. Combine first five ingredients in a 4 qt sauce pan. Stir over low heat until blended. Bring to boil over moderate heat, being careful not to mistake escaping air bubbles for boiling. Then boil slowly, stirring constantily for 5 minutes (to soft ball stage). Remove from heat, stir in chocolate and vanilla (and nuts, if used) until chocolate is melted. Pour into two buttered 9x9" pans and cool. Yield: 5 lb Bill's notes: This is the recipe as given; however, I have made this recipe many times, and it ALWAYS takes some 15 to 20 minutes to reach soft ball stage. A candy thermometer is essential to get it to set correctly. My own innovation: Substitute 2 pkgs peanut butter chips for the chocolate and 1 cup chopped peanuts for other nuts for the best peanutbutter fudge around.
