* Exported from MasterCook * Banana Nut Bread Recipe By : Zel Ford Serving Size : 1 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 c All purpose flour -- sifted 2 ts Baking powder 1/4 ts Baking soda 1/2 ts Salt 1/3 c Shortening -- softened 1 c Ripe bananas -- mashed 2/3 c Granulated sugar 2 Eggs -- unbeaten 1/2 c Nuts -- coarsely chopped Heat oven 358 F. Grease 9x5x3" loaf pan. Sift flour, baking powder, baking soda with electric mixer at medium speed thoroughly mix shortening with sugar. Then, with eggs, until very light and fluffy about 4 minutes. Altogether, then at low speed or blend, beat in flour mixture to which chopped nuts have been added alternating with bananas until mixture is just smooth then turn into pan. Bake 1 hour or until done. Cool in pan 10 minutes. Cool overnight before slicing.
