* Exported from MasterCook * Onion Shortbread Recipe By : typed into MC by Shane Ludwig Serving Size : 12 Preparation Time :0:00 Categories : Diabetic Bread Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 c Flour 2 1/2 ts Baking powder 1 1/4 c Yellow corn meal 1 Egg 4 tb Margarine -- melted, divided 1 c Skim milk 1 tb Italian herb seasoning 1/2 c Onion -- sliced 2 Green onion tops -- chopped In a mixing bowl, sift flour and baking powder together and blend. Add corn meal, beaten eggs, 2 tb melted margarine, and milk. Stir just until blended. Pour 1/3rd of batter into non-stick loaf pan. Sprinkle herb seasoning on batter in pan and then pour in about 1/3rd more batter. Repeat herbs, then pour the remainder of the batter. Saute sliced onions and green onion tops in 2 tb margarine until golden brown and place them on top of the batter. Bake at 400 F for 30 minutes or until done.
