MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Quick Buttermilk Cornbread Categories: Breads, Dairy, Grains Yield: 9 servings 1 1/4 c Corn meal 1 c A-P flour 2/3 c Brown sugar; packed 1/3 c Sugar 1 ts Baking soda 1/2 ts Salt 1 lg Egg 1 c Buttermilk 3/4 c Oil In a large bowl, combine the corn meal, flour, sugars, baking soda, and salt. In another bowl, whisk the egg, buttermilk, and oil; stir into dry ingredients just until moistened. Pour into a greased 9" round or square baking pan (pan will be full). Bake @ 425 F/218 C until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool on a wire rack for 5 minutes. Serve warm.
