Good Corn Bread 1 1/4 c All purpose flour 3/4 c Corn meal 1/4 c Sugar; or to taste 2 ts Baking powder 1/2 ts Salt (optional) 1 c Skim milk 1/2 c Cream style corn 2 Egg whites Combine dry ingredients. Combine wet ingredients in a separate bowl. Put dry and wet together and stir until combined. Do not over beat. Pour into prepared pan and bake in a preheated 400 F oven for 20 to 25 minutes. If you stick a knife it and it comes out clean, you're done. Microwave Directions: Mix wet, mix dry, combine until moistened. Pour batter into an ungreased 9" pie plate or round microwaveable cake pan. Microwave on HIGH for 5 to 6 minutes or until surface appears dry. Rotate ofter 2 minutes. Let stand 5 minutes before serving. I also added some cayenne pepper, and it was nice. Next time I will try replacing more of the milk with creamed corn and adding some frozen corn kernels.
