My Creme Brulee Recipe ***Items Needed*** 2 5oz ramekins (I use two Emile Henry No9) Kitchen torch or broiler feature on oven Bread pan or other pan taller than the ramekins Small mixing bowl ***Ingredients*** 3 Egg yolks 35g of sugar 1 tsp of Pure Vanilla Extract 1 cup heavy cream ***Steps*** 1) Preheat oven to 325f 2) Warm cream in sauce pan over low heat 3) Use a kettle or pot to boil some water for a water bath. 4) Mix egg yolks and sugar until well blended 5) When cream is warm, mix in vanilla 6) Slowly pour warm cream into mixing bowl while mixing 7) Pour mixture into ramekins, use spoon to remove bubbles from top. 8) Place ramekins into a bread pan/suitable pan 9) Pour boiling water into pan until ~3/4 the way up the top of the ramekin 10) Bake in oven for 35 minuties. 11) Remove and let cool on counter 12) Cool in fridge overnight 13) Sprinkle layer of sugar on top and torch. Notes: I am not a porfessional, I just like creme brulee! If you do not have a torch, move your oven rack up close to the top element so that you can use the broiler feature. I do not have a mesh strainer, but I think you could use one to remove the bubbles instead of a spoon. I have not tried this recipe with vanilla beans, but it is on my list to try next. I have had success mixing in chocolate by melting it in the pot I use to warm the creme.
