What GPU would you recommend?

I need help finding a GPU since there’s so many options that I don’t
know where to start.

I’m buying all new hardware so I don’t mind spending a bit, nothing
too crazy though.

What it would be used for is plex/jellyfin transcoding and some AI
generation.

I’m looking to cover like 10-20 4K transcoding streams (I know it’s
better to direct play but we’re gonna ignore that for the
recommendations).

I was looking at maybe getting the Quadro RTX  5000, or maybe an 13th
gen intel chip with an iGPU. But if I got an iGPU I would still like a
dedicated GPU along that for other stuff than video transcoding like
AI generation or just other stuff that I might host one day.
