What is the best practice for an internal Data-Stack?

Do you guys working with data-stacks, for example deployed with
Docker?

Which are the best Open-Source Tools for this - Kafka, Spark, Hive,
Superset, Dbt, ...?

Data-Warehouse without an Datalake?

I  am not sure how to start to deploy such an infrastructure for a
company. Producers are available on mass, but is it enough to go for a
Node Red Server into Kafka and/or Apache Superset?

Some experiences and workflows would help me a lot!
