Every time they update their databank version you would have to export
and reimport the DB. Is there another, automatic way?

Not exactly like that. You need to do that only when you change the
Postgres version. And that changes only if you want to, as you can pin
a specific version in the docker compose so that a new major won’t
ever be installed unless you really want to.
