Recommendation for Open-Source and Self-hosted services for
projects/tickets progress and status update?

We are currently using Jira/Confluence to register, update, add
notes/comments to our various projects. We don’t really fully use Jira
to its potential, we basically enter a project or ticket name, then
keep updating it regularly with the new stats, then we will have some
stats like the distribution of users per their tickets/projects, the
status of projects/tickets (like how many closed vs open), and all
internal within single team, so no need  for email notifications,
approval process, etc…

However, our company want to ditch Jira as part of cost saving, is
there alternative open source self-hosted service that we can use?

Yeah it really is! We use it internally aswell and also has an
integration with M365 if you want. You can also import from jira 😁
