What is the best setup for Nginx Proxy Manager in terms of docker
networking? Connect all docker containers to npm’s docker network or
connect npm to each individual app’s docker network?

Might be a little bit overengineered, but I use

Per application 2 networks,
\- One backbone-network (isolated without internet) connecting all
Stack container (e.g. Webserver, Redis, SQL)
\- One proxy-network, connecting the webserver with NGINX
(can be isolated, if the app don't need any internet access for
running)

Goal: Only applications that realy need to communicate with each other
per network
Isolate docker container from the internet as much as possible.
