I've come across this [list](https://github.com/meirwah/awesome-
workflow-engines), but I'm uncertain about which option would suit my
requirements without going through a trial-and-error process. Do you
have any recommendations for a tool similar to "Postman flows" that
enables the creation of chained HTTP requests and allows for response
analysis?

Argo Workflows is a full blown workflow engine. It’s nice but maybe
too much for your use case. Plus you need to self-host Kubernetes too.
Nuclio is ok but idk if it fits your use case
