Track/Monitor Website Changes?

\[I apologise if this is the wrong sub for this\]

I'm looking for a way to scrape or monitor a website that sells
accessories.

Context: for Black Friday, they're going to upload a bunch of
previously returned or unsold items in the backend for sale on Friday
morning. I want to know if there's a way to find out which items have
been added/changed in the backend.

A few years ago we were able to see which items were tagged with
"BlackFriday" but the website has moved away from Shopify now.

Oh interesting! Ok so it's a subscription service, but it auto
monitors for changes?
