Recently updated my video card, wanted to use my previous 5700 XT.
That things too big to fit into the server, so I'm wondering if there
are compatible GPU enclosures I can use? Would I be able to use that
with plex?

Running Ubuntu 22.04.2 LTS

I doubt the server has a thunderbolt port, so likely not

How is that about selfhosting **software** services?

Try subs like /r/Homelab /r/HomeServer etc.
