Network traffic monitoring and enforcement recommendations

Using Tailscale exit node on all my devices to forward all traffic to
local server with unbound/pihole+apps.

I'd now like to monitor my network traffic and be able to block/allow
traffic based on policy (src/dst/port) in a nice management pane.
Since all traffic is going through one exit node, is there an open
source option to host on this server? and if so which would you
recommend for this task?
