I love me some DNS issues!  These are great puzzles to figure out!

> I want Unbound to respond with the local IP address of my server for
all *.mydomain.com

If that's the case, double check your authoritative DNS servers,
(whois mydomain.com) 'cause that's who will answer.

Here's what I am doing.  I am using dyndns.org for my auth DNS, (I
paid the $15 more than 20 years ago for "lifetime" access), and I
point it to my dynamic IP (from my ISP).

I have a sub domain that I am using Technitium DNS for my zones.  I am
using Adguard, (subtitue Pi-Hole) and I delegate my sub domain and the
in-addr-apra to the dns servers.

    [/sub.domain.com/]192.168.0.XXX
    [/0.168.192.in-addr.arpa/]192.168.0.XXX

Unbound is just a resolver, I think. I think you missing the auth
part.  I go in and I add my records in NPM to point to the docker
hosts the services are running on, using CNAMEs.

Or, you need to update your dnsmasq configs. I used to do that when I
ran Pi-hole, but I forget how to do it.
