Need help understanding how permissions work and downloading to nfs

I have my download clients in docker containers running on a NUC and
I'm trying to get them to download to my WD NAS but the files made
have the ownership as nobody:share (501:1000) rather than admin:share
500:1000 Deluge and Nzbget give me nobody owner and qbittorrent gives
me permission denied.

run the container with -u 500:1000

I don't use containers, always just make sure the appropriate users
are in a group with appropriate privileges
