For Syncthing, what am I supposed to when one directory has changes
but it hasn’t synced with another in a long time?

I just ended up deleting the old one and syncing all over again since
it  didn’t take much time for the files to sync. But I have a folder
that’s  let’s say several GBs or bigger, what should be done? I did
attempt  just syncing them again but then I saw old files appear and
decided fuck  it.

Check the logs, could be any number of issues, from permissions to
file locks.

Be aware size is not always a good indicator, this can differ between
different file systems, and even what appear to be the same, they can
differ (it depends what block size was used).
