Question about VPS/VPN setup

Hey everyone!

I have a proxmox server with ubuntu vm that is running a bunch of
dockers.  I also have it port forwarded and reverse proxied to point
to a duckdns domain.

Now, I want to go to the next step of the self learning journey and
want to setup something that will mask my public IP.  I came across
this [video](https://youtu.be/SMF301vQqJo) that explains VPS/VPN.
However, I am still not clear on what's actually happening here.  I
will be setting this up the proxmox level on my server.

* Once setup, will all the data coming in and going out of my server
go through the VPN?
* What happens if I want to stream Jellyfin on my local network?
* Since the video pointed their duckdns domain to the VPS server, will
only the connections through the domain go through VPN?
* What will I see if I run `curl -s`
[`ipinfo.io/ip`](https://ipinfo.io/ip) after connecting to the VPN?
* Will this keep me safe if I am to torrent ubuntu isos?

I have been selfhosting for less than 4 months now and I have learned
tons!  Nonetheless, I'm still a beginner and would appreciate it if
someone could clear my questions
