Wondering is it possible to simply modify IRCCloud app for
Android/iOS, to be able to directly connect to custom IRC server,
without using IRCCloud's account/servers?

It doesn't even use the IRC protocol itself but IRCCloud's own, so no.

Both Yaaic and Revolution IRC are no longer actively maintained:
