Hexchat closes randomly after a few days?

My settings are close to tray, so the only way I should be able to
close the application is by manually choosing "quit" from hexchat
itself, or by right clicking in the tray to close it.

Yet always, after 3-5 days of being open, I'll get on and it will be
closed.

I am the only person using this computer.

Anyone else with the same issue?

Specs:

    Hexchat 2.10.0
    Compiled: Jun  1 2014
    Portable Mode: No
    Build Type: x64
    OS: Windows 7 SP1

You need to provide more information.  OS, hexchat build, any loaded
plugins/scripts, error output, etc...

Is it closing when you get an idle disconnect?

This has happened to me for years with hexchat. I would keep it
connected to my own ZNC bouncer and it would either exit with the
message you are getting (Disconnected (No such device or address) or
it would crash overnight and windows would show a error report window.

For what it's worth, there is a more recent build out there. They are
on 2.12.4 now. You could try upgrading.
