What kind of anonymity are you looking for? If you don't want other
users on the server knowing your IP, the server you're on probably
hides that info from other users. If not, or you want your ISP hidden,
look into a BNC or a VPN.

If you want to keep prying eyes from reading your text, that's a
little more complicated. IRC is an inherently "leaky" protocol. You
can connect via SSL, but that only encrypts *your* connection to the
server - if you're talking in a channel, your communications can be
intercepted from any other user connected, if they're not connected
securely.

Tl;dr Be more specific with your needs and you'll be able to get more
specific advice.
