enough baby potatoes for 2 plates, one big onion 2-4 bone in skin-on chicken thighs smoked paprika, salt, pepper, oregano (fresh is really good but dried is fine) 1 lemon, 1 clove of garlic (optional) pre-heat oven to 425 F cut slits in chicken breasts to either side of bone to flatten them out a bit season the underside with smoked paprike, salt and pepper, rub a bit of salt into the skin on top slice baby potatoes, slice onion, dice garlic make a layer of baby potatoes on bottom of cast iron pan with a little oil, pile remaining potatoes and onion on top fry until one side potatoes are brown, then stir it all up and fry a bit more until the onions slightly soften, add the garlic and oregano, stir it all up lay down lemon slices to make a "lemon bed" for each chicken breast to sit on, put them on spice side down, skin/salt side up put pan in the oven and cook 30 mins, after 30 mins, turn broiler on high for exactly 60 seconds to crisp up the skin plate the chicken, remove the lemon slices, give the potatoes/onions one last stir, and serve them too .
