Kitchen Table Kibitzing 8/3/2026: Emergency Bean Prep [1] ['Meteor Blades', 'Wafflehacker Aka Joshhacks'] Date: 2026-08-03 Good evening, Kibitzers! I have returned from my wild weekend in Guerneville, California. I said that I’d report back about it, and I will, but probably next week. We got back late last night, and today was overwhelming since I needed to catch up with work and do a bunch of stuff around the house. Speaking of which, one of the things we realized when we got back was that we had literally no food. Okay, not literally. But we had no food ready to eat, I’ll put it that way. We both tried to eat “well” while in California, and we both failed, to varying degrees. We’re in desperate need of fiber, so I whipped up a couple of bean dishes. I had no time to mess around with Rancho Gordo today, so canned beans came in clutch. I thought I’d share what I made! First, I tried out a recipe I found on TikTok for creamy pea pesto white beans. The recipe can also be found here. Check the link for the full recipe, but as always, I made some changes. I doubled the recipe, left out the mint it called for (I hate fresh mint, but weirdly enough, I love mint flavor), and subbed regular milk and cheese for the vegan ingredients. This was a very easy recipe, and packed full of flavor! I started by making the pesto in a food processor with the following ingredients: a pound of frozen peas (thawed), a cup of fresh basil, the zest and juice of two large lemons, half a cup of nutritional yeast, half a cup of walnuts (I’m not buying pine nuts in this economy), eight garlic cloves, two teaspoons of kosher salt, and a teaspoon of crushed red pepper flakes. After blitzing those ingredients, I drizzled in half a cup of extra virgin olive oil to finish the pesto. Isn’t it pretty? Chrislove Next, I cooked a large diced onion in a quarter cup of olive oil until it was tender. Then, I added in eight minced cloves of garlic and cooked off the raw flavor before stirring in all of the pea pesto and four 15-ounce cans of navy beans (drained and rinsed). If you want to try making this with dry beans (cooked, obviously), you could substitute a whole pound of whatever white beans you want. I also added a cup and a half of milk and brought it up to a simmer for a few minutes. Finally, I stirred in a very generous amount of parmigiano-reggiano cheese. While the onions were cooking, I parboiled two pounds of broccoli florets that I was planning to have on the side. But then I thought, why not just add it in? The pea pesto is green, the broccoli is green, it makes sense, right? So that’s what I did. The broccoli got softer than I’d planned, but that was fine, because it all just kind of melded together. I would probably do it again. Chrislove Anyway, this is fantastic and I will definitely be making it again! Maybe with Royal Corona beans next time, since I find these smaller navy beans to be less satisfying. As for the second dish, I happened to have one zucchini in the fridge and a random stray jar of tikka masala simmer sauce in the pantry. So I got a couple cans of kidney beans to make a curry with. I started by cooking a large diced onion in some oil until it started to get tender, at which point I added in the zucchini (sliced into thin half-moons) and cooked until softened. Chrislove Then, I added in some ginger-garlic paste and some tomato paste, followed by the jar of tikka masala simmer sauce and the kidney beans (drained and rinsed). Instead of heavy cream, I opted for about a cup of Greek yogurt for the added protein (and tanginess). I finished it with some cilantro. Chrislove This was another banger. I really liked the zucchini in this! I added it just because I had it on hand, but I think I’ll add zucchini to curry more often. Chrislove Maybe one of these will inspire you, or maybe not. Either way, fiber is back in our lives and I couldn’t be happier. What’s on your mind (or plate) this evening? 🫖 💭 🥂 🍽️ ☕ [END] --- [1] Url: https://www.dailykos.com/stories/2026/8/3/800079327/community/kitchen-table-kibitzing-8-3-2026-emergency-bean-prep/ Published and (C) by Daily Kos Content appears here under this condition or license: Site content may be used for any purpose without permission unless otherwise specified. via Magical.Fish Gopher News Feeds: gopher://magical.fish/1/feeds/news/dailykos/
