Kitchen Table Kibitzing February 22, 2026 [1] ['This Content Is Not Subject To Review Daily Kos Staff Prior To Publication.'] Date: 2026-02-22 Onions On last Sunday’s KTK, Thinking Fella posted the song “Green Onions”by Booker T. & The MGs. We keep a supply of scallions at all times, mostly because Jessica Seinfeld calls for them often in her recipes. We always have yellow, sweet, red, and white onions as well as shallots. So many of our meal plans begin with “sauté some onions in butter and…...” We top every burger and bagel & lox with a thick slice of raw red onion. Along with garlic, onions are our must essential vegetable. Onions can be roasted, grilled, pickled, caramelized, battered and deep-fried, sliced thinly or chopped and served raw in salads, sandwiches, dips. I seldom make onion rings, but usually order them in restaurants. Onions are a widely cultivated vegetable crop, produced in the second largest quantity after tomatoes.[83] In 2021, the top global producers of onions were China, India, the United States, and Turkey.[84] In 2022, world production of onions and shallots (as green produce) was 5.0 million tonnes, led by China with 17% of the total, and Mali, Angola, and Japan as secondary producers.[82 I used to think everyone liked onions, but I’ve run into folks, even here, that couldn’t stand them. This surprised me, since they are so important in our cuisine. More frequent are those who like them cooked but never raw. At the farm I grew many onion varieties, of varying shapes, sizes, and tastes. Tiny bulbs (sets) were easy to plant, but I got far better production from seedlings, which are usually available from nurseries. I love the Petite Boiled onions and buy them every time I find them in the store. They are a bear to peel and cook from raw, but I discovered from Bon Appétit magazine that everyone uses the machine-prepared commercial version, even high end chefs.. Just for fun I googled “onion recipes” and found hundreds. I printed out one called “roasted” which uses a vinegar marinade and we will make this soon, and report next Sunday. If anyone has a favorite use of onions, let us know.
